This is a really warming soup traditionally used throughout Japan as a staple in the daily diet. For all the goodness that it brings it is an incredibly straightforward soup to enjoy hot in the winter or cold in the summer.
4 cups of water
½ cup of sliced red onion
1 tbsp chopped kelp
1 tbsp grated ginger
2.5 tbsp white miso paste
¼ cup finely chopped spring onions
Bring water to the boil, adding onions, ginger and kelp. Cover and simmer until onion becomes soft. Remove from heat and leave to cool, then add miso and spring onions. Serves four.
